Creamed Corn – Fresh is Best!

Creamed Corn
Yield 4 Servings
Ingredients
3 cups Florida sweet corn kernels (5 or 6 ears), divided
3/4 cup low-fat milk
1 tablespoon cornstarch
Kosher salt and fresh ground pepper to tastePreparation
1. Place milk, cornstarch and 2 cups of corn in a blender and blend until smooth.
2. Transfer the puree to a medium saucepan and add the remaining 1 cup corn.
3. Cook over medium-high heat, stirring constantly, until the mixture simmers and thickens and the corn is tender, about 5-7 minutes. Taste for seasoning and adjust to personal preferences.
Here is a simple tip to dress up your fresh corn dish. Try adding in your favorite cheese right before you serve or grated on top.
