Micro Greens = Macro Flavor

Recently I was invited to tour a organic farm in south Florida that specializes in micro greens (http://www.paradisefarms.net/). Micro greens are super-small, tender plants.  They are the miniature version of salad greens, herbs, edible flowers, and leafy vegetables. They often show up on the plates of fancy restaurants. There are many varieties which include micro-fennel, micro-arugula, micro-spinach, and micro-chrysanthemums.  They are mostly used as a garnish or topping and can give a dish that certain something extra. Here are a few pictures from the farm. The next time you see micro greens on your plate, take some extra time to enjoy these  little flavor miracles of  Florida Agriculture.
