Behind the Scenes: Taste Testings

I have been a very bad blogger as of late, I don’t think I’ve posted in almost a month! It’s been busy… Well, I just spent the last week out at our seafood department img_02381in our ‘test’ kitchen (well, it’s more like a kitchen with a few extra refrigerators and a couple stoves). Chef Justin, fellow bloggers Tom and Sarah, Joan (she takes excellent photographs) and myself have been busy conducting taste testings and photo shoots galore for our new Florida produce brochures that will be coming out later this summer. I’ll post about the new brochures a little later. They’re going to be great!

Not sure if you’ve ever participated in a taste testing, but they are a lot of fun, especially when you’re the taster. Think of all the different food you get to try and most likely have never made it before. Yum! As for the organizers, well it’s a little different. Now, don’t get me wrong, it is a lot of fun, but a lot of work. We sampled and surveyed 17 recipes (that doesn’t include all the recipes and individual commodities we had to photograph… those were some long days!). And I can’t even begin to tell you about all the cooking that Justin and Tom had to do to make enough samples.

I have to say, it’s really fun to watch people try food and see their reactions. You get to see some pretty funny looks and reactions when people don’t expect or like something. I had to keep telling Justin to go back to the kitchen so he wasn’t out there while people sampled. I didn’t want him influencing their decisions – I mean, would you write your honest opinion (especially if it was not good) about a recipe if the chef who wrote it was standing right there? Probably not!

Overall, the taste testings were a great success and we got some excellent feedback on the recipes. It’s useful to conduct taste testings to see what the general consumer thinks about a recipe. We want to make sure they are good! Here are a few pictures of some of the great food Justin cooked up and sampled. If you see anything interesting and are dying for the recipe, leave a comment!

    i enjoyed doing the testing. it was interesting to hear what people thought. in my opinion (and i think everyone agreed), that avocado and egg salad was awesome. i really enjoyed the watermelon sandwich too. i didn’t get to try the soup because we ran out but it sounded like something i would like. we are lucky to have such a talented chef in our office.

    The creamy corn and jalapeno soup was not only pretty it also left a zippy after taste. Great job by all of the folks who put this together. Can’t wait for the recipes to be available!

    I love taste testings! I’ve only been to one, but they are fun. I’m glad I came across this blog. It’s really good.

    These look great. I’m glad that I get to proofread all of the recipes so that I get a sneak peak at them. Here’s a teaser…the new recipes look great and people are going to think they are really yummy!
