How to: Florida Eggplant

Here is the best way to cut an eggplant for cooking, in a quick and efficient manner!

Hold eggplant down firmly on the cutting board. Slice off both ends of the eggplant and discard.

Cut eggplant in half.

Peeling the eggplant. Place the now flat side of the eggplant down on the cutting board and make a series of shallow slices down following the contour of the eggplant. Stay as close to the skin as possible when making cuts. Work all the way around until it is completely peeled.

One the eggplant has been peeled, cut straight down the middle. Then cut each half in half again.

At this point continue to make your cuts according to how big you want each individual  piece.

Use the eggplant as soon as possible as it will start to oxidize and turn brown.
