3 Ways: Strawberries

I figured this was the perfect time to do a “three ways” post on strawberries. As we enter peak strawberry season, you will see Florida berries in grocery stores from Miami to Montreal, usually under $3 for a big 16 oz package. Go ahead and add them to your shopping list because you’re going to want to give these three semi-unusual recipes a try…

  • Chilled Strawberry-Mint Soup – Simple and refreshing. Once you get all your ingredients together, it doesn’t take more than 10 minutes to make this. Give it a little chill time then enjoy! (from Whats Cooking America)
  • Iced Strawberry Tea – A new twist on traditional Southern sweet tea (skip the sugar for regular iced tea). I can see a pitcher of this going over really well at a family brunch or even a bridal luncheon. (from Florida Strawberry Growers Association)
  • PB&S Sandwich – Doesn’t peanut butter taste good with everything? Replace regular grape jelly with some fresh sliced strawberries. You can even add a little banana on there if you’re feeling crazy.

Bonus: I can’t mention strawberry recipes without giving you one for my favorite dessert, strawberry shortcake.  Check out this one that includes the recipe for the shortcake too (from Allrecipes). Feel free to drop some off at our office when you’re done cooking.

    I love strawberry shortcake too. That one looks delicious. I am going to have to try the iced strawberry tea.

    Here’s an Italian cooking trick: if strawberries are less than sweet, add a few drops of balsamic vinegar and a little sugar, and let steep for a few minutes. It won’t taste vinegar-y, but will taste ripe and luscious.

    Strawberries in February? Another reason to love Florida. Strawberry freezer jam made from freshly picked, local strawberries is almost as good as fresh, local sliced strawberries on peanut butter sandwiches (and on cornbread too!).
