Florida Stone Crab Claws- A Sustainable Seafood Delicacy

Now we all know that stone crab claws are delicious. Once you crack the claw with the back of a spoon you are able to pull out a tasty morsel of meat attached to the moveable pincer. One of the most popular ways to serve them is cold on a bed of ice with a mustard dipping sauce, but they are also commonly eaten hot with drawn butter and lime juice.  The firm, sweet meat tastes similar to lobster.  It’s extra lean, low in fat, and a good source of protein.

But did you know that stone crab claws are a sustainable seafood? Sustainable seafood is seafood from either fished or farmed sources that can maintain or increase production in the future without jeopardizing the ecosystems from which it was acquired. Florida’s commercial fishermen capture the crab and take one or both of its claws and return the crab back to the water. The stone crab’s ability to regenerate lost limbs after about 18 months makes it possible to harvest the meaty claws without harming the crab.

Stone Crab Claws with Spicy Golden Mustard Sauce

3 pounds medium Florida stone crab claws
2 tablespoons dry mustard
1 1/2 cups mayonnaise
1 tablespoons Worcestershire sauce
1 tablespoons half and half

Crack claws; remove shell and movable pincer leaving meat attached to the remaining pincer. Set aside. Combine mustard, mayonnaise and Worcestershire sauce; blend slowly for 3 minutes. Add small amounts of half and half until mixture has a creamy consistency. Serve claws with mustard sauce on the side. Note: Sauce can be refrigerated up to 5 days.
