FSU vs. UF – Fresh from Florida Chicken Tailgate

We had a great time serving Chef Justin’s Fresh from Florida Chicken Nachos on Saturday to hungry FSU and UF fans. Check out pictures from the event here on our Facebook page! Remember that you can purchase Fresh from Florida Chicken at Sam’s Club under the Member’s Mark brand, Publix under the Publix Greenwise brand and Wal-Mart under the Pilgrim’s Pride brand. The chicken was raised and processed right here in North Florida and is always fresh.

Game Day Chicken Nachos
Yield 4 to 8 Servings


  • 2 cups Florida chicken, cooked and chopped
  • 1 cup Florida tomatoes, chopped
  • 1 cup Florida corn, roasted and removed from cob
  • 1 cup red onion, chopped fine
  • ¼ cup fresh cilantro, chopped
  • Kosher salt and fresh ground pepper to taste
  • 1 tablespoon taco seasoning (Cajun seasoning will do)
  • ½ cup low-fat sour cream
  • 1 lime, juiced
  • ½ cup white Mexican farmers cheese, crumbled (shredded jack cheese will work)
  • 1 bag tortilla chips


In a large mixing bowl, combine chicken, tomatoes, corn, onion, taco seasoning and cilantro. Mix well, taste and adjust flavor with salt and pepper. In a small mixing bowl, add sour cream and lime juice. Taste and adjust flavor with salt and pepper. On a large platter, add a layer of tortilla chips. Top the chips with the chicken salsa mix. Add the sour cream mixture to a sandwich bag, and cut a small corner off the bag. Using the bag of sour cream as a piping bag, put sour cream all over the salsa and tortilla chips. Garnish the top with crumbled cheese. Serve and enjoy.
