Zucchini Cakes with Spiced Yogurt with Salad

Zucchini Cakes
Yield 4 Servings


1 ¾ cup whole wheat pancake mix
½ squash, grated
½ zucchini, grated
1 cup cheese, shredded
Salt and pepper to taste


Follow pancake directions on box to make 4 servings. Add grated zucchini, squash and cheese to pancake mixture. Lightly fold together and season with salt and pepper. Cook zucchini cakes using method on pancake mix box.

Spiced Yogurt Sauce
Yield 4 Servings


8 ounces plain low-fat yogurt
1 teaspoon favorite seasoning mix


Combine yogurt and seasoning mix in a small bowl. Mix well and adjust seasoning with salt and pepper.

Yield 4 servings


1 Head romaine lettuce heart
2 carrots, peeled
1 large celery stalk
1 large tomato
1 tablespoon olive oil
1 tablespoon vinegar


Chop lettuce and place in large mixing bowl. Slice carrots and celery and add to lettuce. Chop tomato and add to salad mixture. Toss ingredients together and place in serving bowl. Mix oil and vinegar together and serve with salad.

    This is very nice to show how to incorporate fresh fruits and vegetables into meals and the recipes are easy to follow. I believe that if more people took nutrition classes they would not be so intimidated by the thought of cooking at home. I have a family of four and I work full time. One child is on a special diet where I have to go by the USDA serving amount already and it is a challenge, but with the help of the nutritionist to guide me, I have overcome the intimidation of it. Nutrition classes would definitely be an added bonus to buying healthier food since people need to know what to do with after they get it. Thanks Commissioner! You’re on the right track.
